When someone says “pudding for breakfast”, you immediately have my attention. Three things standout… Creamy, coconutty and absolutely good for you. Do you like to save time in your busy mornings? Well, this is a cracking brekkie recipe for you.
If you’re not a huge fan of coconut – sub. with almond milk. Add cacao powder and you have chocolate chai pudding for brekkie, snacks or dessert.
It lasts for a couple of days in your fridge… so you can put the jar back for “Ron” (you guessed it – later on)…
The Batman of food – What?
It’s a modern day superfood. Available in black or white (or really, really dark grey)… can you see where I’m going here… if chai seeds were a superhero it’d be Batman (dark and brooding… but packs a punch of goodness).
The chai seed breakdown: 1. Lots of nutrients with very few calories. 2. Loaded with Antioxidants. 3. Almost all the carbs in them are fibre. 4. High in Protein. 5. High in Omega-3 Fatty Acids.

The Recipe – Chia Pudding
¼ cup of black chia seeds
¼ cup of white chia seeds
1 cup of coconut milk
1 medium banana
½ cup of blueberries
1. Blend the banana and coconut milk together.
2. Mix the chia seeds into the blended milk.
3. Stir evenly until the chia seeds are covered.
4. Place in blueberries.
5. Soak over night in a sealed jar.
6. Enjoy in the morning.
